Toor Dal

Toor dal, also called tuvar or arhar dal, is the dal for a lot of homes: the base of sambar and pappu in the South, Gujarati dal and the classic dal tadka in the North. It's split, husked pigeon peas, which you'll rarely find in a German supermarket.

We stock toor dal from TRS, Aayush, Avanee and Schani, from a 500 g bag up to the 2 kg pack for households that make dal every Sunday. Rinse, soak for 30 minutes and pressure-cook with a pinch of turmeric for three to four whistles, and it's creamy and ready for tadka or sambar masala.

If you're making sambar, you'll usually also need tamarind, sambar masala, mustard seeds and curry leaves, so add those to the same order.

Frequently asked questions

Is toor dal the same as chana dal?
No. Toor dal is split pigeon peas, chana dal is split chickpeas. Both are yellow, but chana dal is bigger, takes longer and stays firmer. Sambar is made with toor dal.
How long does toor dal take to cook?
Soaked, about three to four pressure-cooker whistles, or 40–50 minutes in a regular pot until it mashes easily.
