Chana Dal

Chana dal is split, husked small chickpeas (desi chana), not to be confused with the big pale kabuli chickpeas used for chole. It stays firm when cooked and has a slightly nutty taste, which makes it right for chana dal fry, lauki chana dal, puran poli and vada. In South Indian kitchens a spoonful goes into the tadka.

We stock chana dal from Aayush (1 kg) and TRS (500 g), plus roasted chana dalia (pottukadalai, putnalu), ready roasted for coconut chutney with idli and dosa or as a snack on its own. Soak raw chana dal for 1–2 hours, then three to four pressure-cooker whistles are enough.

For puran poli, chana dal is cooked soft, mashed with jaggery and cardamom into a filling and rolled into an atta dough.

Nearly: chana dal is made from small brown chickpeas (kala chana), husked and split. The big pale chickpeas from the supermarket are kabuli chana. Besan is ground from chana dal.

Chana dal that's already roasted. It needs no cooking and goes into coconut chutney and podi mixes, or gets eaten as it is.
