Sona Masoori Rice
Sona masoori is the everyday rice of Andhra Pradesh, Telangana and Karnataka: a medium grain that goes with sambar, rasam, pappu and curd rice. Unlike basmati it has little aroma and doesn't lengthen as it cooks, it turns soft instead, which is exactly what you want when the rice should soak up the gravy.

- Sona masoori has a shorter grain, very little aroma and cooks soft. Basmati is long, fragrant and stays separate. Sona masoori is the everyday rice for South Indian meals, basmati is for biryani and pulao.
- How do you cook sona masoori?
- Rinse two or three times, add about twice the amount of water and simmer covered on low heat for 12–15 minutes. In a pressure cooker, two to three whistles are enough.
