Masala Dosa — a classic Indian recipe, made simple for your home kitchen.
Dosa Batter (Preparation for 5 servings)
- Soak the Ingredients: Rinse the
Idli Rice andUrad Dal separately until the water runs clear. Soak the rice in ample water for at least 4-6 hours (or overnight). Soak the urad dal along with theFenugreek Seeds in separate water for at least 2-3 hours. - Grind the Dal: Drain the urad dal and fenugreek seeds. Grind them in a wet grinder or powerful blender with about 50 ml water to a very smooth, fluffy paste. Add more water, a tablespoon at a time or ice cubes, one at a time, if needed, but keep it as thick as possible initially. Transfer to a large bowl.
- Grind the Rice: Drain the rice. Grind it in the same grinder/blender, adding about 70 ml water gradually, to a slightly coarse, but still smooth batter. It should not be as fine as the dal. Transfer this to the same bowl as the dal paste.
- Combine and Ferment: Add
Salt to the batter mixture. Mix well by hand for 2-3 minutes. This incorporates air and helps with fermentation. The batter should be of pouring consistency, similar to a thick pancake batter. Cover the bowl loosely and let it ferment in a warm place for 8-12 hours, or until it doubles in volume and becomes light and airy.Tip: In colder climates like Germany, preheat your oven to its lowest setting (e.g., 50°C), turn it off, and place the covered batter bowl inside to ferment. Alternatively, use an oven with a 'proof' setting or a warm spot near a radiator. - Refrigerate: Once fermented, gently stir the batter. Do not overmix, or the air will escape. The batter is now ready to use. You can store any leftover batter in the refrigerator for up to 3-4 days.
Potato Filling (Masala) (Preparation for 5 servings)
- Cook Potatoes: Boil or steam the
Potatoes until tender. Peel and coarsely mash them. Set aside. - Prepare Tadka: Heat
Oil in a pan over medium heat. AddMustard Seeds . Once they splutter, add the choppedOnion , gratedGinger , and choppedGreen Chilli . Sauté until the onion turns translucent. - Add Flavour: Stir in the
Curry Leaves andTurmeric Powder . Sauté for another minute until fragrant. - Combine: Add the mashed potatoes and
Salt to the pan. Mix everything well, mashing gently to combine the flavours. Cook for 2-3 minutes. Remove from heat.
Making the Dosa (Per serving - 2 Dosas)
- Prepare Tawa: Heat a non-stick tawa (flat griddle) or cast-iron pan over medium-high heat. To check if it's hot enough, sprinkle a few drops of water; they should sizzle and evaporate immediately. If using a cast-iron tawa, lightly grease it with
Oil or Ghee and wipe off any excess with a paper towel. For non-stick, you might not need to grease it each time. - Spread Batter: Lower the heat slightly. Pour a ladleful (about 120-150 ml for one dosa) of dosa batter in the centre of the tawa. Using the back of the ladle, quickly spread the batter outwards in a spiral motion to form a thin, even circle, about 20-25 cm in diameter. Work quickly before the batter sets.
- Cook Dosa: Drizzle about 1 tsp of
Oil or Ghee around the edges and over the dosa. Cook on medium heat until the edges start to lift and turn golden brown, and the bottom is crispy and golden. This usually takes 2-4 minutes. - Add Filling: Once the dosa is cooked on one side, place a spoonful or two (about 150g) of the potato filling on one half of the dosa. Gently fold the other half over the filling.
- Serve: Remove the Masala Dosa from the tawa and serve immediately with
Sambar andChutney .
