In the Kitchen: In Karnataka, ragi mudde is made by stirring the flour into boiling water and shaping it into soft balls to eat with sambar or saaru. Mix it with rice flour and buttermilk for a quick ragi dosa, or with wheat atta for rotis. Ragi porridge, cooked with milk and jaggery or with buttermilk and salt, is a common breakfast in South Indian homes for children and grown-ups alike. Stir constantly, as it thickens fast and can go lumpy.
